ACETO NIAGARA was founded by Wolfgang Woerthle and Martin Gemmrich. Wolfgang, a passionate farmer, is also a major producer of Niagara Icewine grapes and wine grapes for local wineries. Martin, a graduate of the world famous Institute for Viticulture and Oenology Geisenheim Germany, brings with him over 30 years of experience in wine making and the beverage industry.
On their frequent travels to Europe, they noticed a revival of the ancient art of making fine vinegar. Inspired by this they experimented with different Niagara fruits, fermenting them into vinegar. In 2004 both partners joined together and launched ACETO NIAGARA.
Following an old tradition, all vinegars are slow fermented, and after years of aging in French oak barrels, or glass, they are individually bottled and labelled by hand.
