Why You'll Love Them?  All of our chocolate bars are made 'Bean to Bar' meaning we source organic, fair trade and ethically sourced beans from all over the world to make our single origin bars.  This particular bar is made from Amazonas and is grown by an indigenous community two days canoe trip from the nearest road. It is a wild harvested Forastero bean. It has some cedar aromas and flavours and a subtle earthiness, as well as hints of nut and apricot flavours. Two Tips Enjoy any of our bars as your chocolatey fix or incorporate them into your baking!   

Tim Simpson and Aura Hertzog met in the culinary program at George Brown college in the fall of 1999. Their experience in the food industry is vast and includes everything from high end hotels, large scale restaurants, small pastry shops, farmer’s markets, international supermarkets and catering companies. Most recently Aura and Tim opened a successful retail bakery in Kitchener. They sold the bakery to focus on family and redirect their passion for food. Ambrosia is the accumulation of their life’s work and experience.
