Why You'll Love Them? 

All of our chocolate bars are made 'Bean to Bar' meaning we source organic, fair trade and ethically sourced beans from all over the world to make our single origin bars.  This particular bar is made from Certified Organic Trinatario beans from Madagascar, in the Sambriano Valley. It is a rare single estate bean. It is a powerhouse of flavours with quite a bit of bright fruit, raspberry, plum and apricot.

Tim Simpson and Aura Hertzog met in the culinary program at George Brown college in the fall of 1999. Their experience in the food industry is vast and includes everything from high end hotels, large scale restaurants, small pastry shops, farmer’s markets, international supermarkets and catering companies. Most recently Aura and Tim opened a successful retail bakery in Kitchener. They sold the bakery to focus on family and redirect their passion for food. Ambrosia is the accumulation of their life’s work and experience.
