We pick our Icewine at -10°C or colder to make sure every ounce of water left in the grapes is completely frozen. We don’t want to dilute this incredible wine in any way. Once in the Harvest Room we press the frozen bunches of grapes at up to 100 psi just to extract a few trickles of the thick and sweet juice. Because the juice is so cold and sweet we have to use aggressive yeast to start and maintain fermentation, which can take several months. The wine is sweet but is finely balanced with fruit flavours and a strong backbone of acidity. Riesling is one of the great white grape varieties with excellent aging potential. This wine is a terrific example. Pairing Icewine with food can be a bit tricky but Michèle's fail-safe approach is to make sure the food is as sweet as the wine. Remember, chocolate is not sweet enough. With this Riesling Icewine she loves anything with salted caramel, like New York style cheesecake with a shortbread crust. If you really want to impress your friends try serving Icewine as an appetizer with foie gras.

Paul Bosc Sr. and his team use modern science and a lot of TLC to coax the best out of every vine. And with more than 30 vintages in our vineyards we think we know which varieties grow best in which spot. But there is always more to learn.

In our home wine is an important part of most family dinners. It is treated like another food group. There is an interesting phenomenon that happens when wine is enjoyed with a meal ”” life slows down. We discuss each other's days. We enjoy the time together. Dinner becomes more than just food, it becomes a meal.

We hope that each and every bottle of our wine gives you a taste of who we are and why we love sharing a little of our way of life with you. Because making wine is not what we do, it's who we are.

We normally ship within two business days of receiving your order. Shipping time is additional, depending on the method of shipment you select. Normally, orders cannot be changed once placed. Someone 19 or older must both place the order and receive it. Minimum purchase is two (2) bottles. Mixed cases are happily accepted.
