Don’t like sweet pickles? Not so fast. These beauties are less cloying than those that are commercially available, and Courteau tells me he sells the majority of them to recent converts. Often, people will approach him at fairs and categorically assert their hatred for the sweet pickle (who knew that such strong opinions were held about preserved cucumbers?). With a bit of coaxing, he gets them to try a sample, and their faces light up when they realize that this isn’t like anything they’ve had before and that perhaps they’ve misjudged sweet pickles.

Crown Pickle is a one-man operation led by David Courteau, who works as the pastry chef at Leméac restaurant in Montréal. Courteau started making pickles in his free time. From there, he set up Crown Pickle, the tasteful adventure of preserving the humble cucumbers and making smooth tomato ketchup.

« What makes these pickles so amazing? Courteau’s attention to detail. The careful precision that goes into his pastry work is reflected in his savoury products as well. » — Bryan Brazeau , mtl.kitchen
