Cajeta is a traditional Mexican caramel spread made with goat's milk. Hand-crafted in Vancouver by chef Rossana Ascencio. Made in small batches using only the finest ingredients. Our cajeta is the only one made in Canada. Enjoy it on toast, pancakes, bagels, waffles, cookies, french toast, in crepes... warm it up and pour over ice cream, fresh fruit, cheesecake, brownies, or pastries. Add it to your coffee, latte, warm milk, smoothie, or simply have a spoon full. Crepes with Cajeta & Blueberry Compote By Rossana Ascencio Serves 4 Ingredients Crepes 1 cup All purpose flour 1 cup Milk 1 Large Egg 1 tsp Sugar ¼ tsp Salt 1 tsp Pure Mexican vanilla extract ½ cup Goat’s milk Cajeta 1 Tbsp Butter – room temperature Icing sugar – for plating Blueberry Compote 1cup Blueberries 1 Tbsp Sugar 1 tsp Pure Mexican vanilla extract Method Crepes Directions: 1. Warm up a crepe pan (or non-stick frying pan) to medium high 2. Whisk the flour, eggs, milk, vanilla, salt & sugar, making sure there are no lumps in the mix 3. Lightly butter the pan, reduce temperature to medium 4. Add a quarter of a cup of the mix into the pan 5. Allow the crepe to cook for about two minutes before flipping. Avoid too much browning 6. Reserve the crepes on a plate 7. In a separate pan over low heat, warm up the cajeta, adding a tablespoon of milk and stirring Blueberry Compote Blueberry Compote 1. Place the blueberries in a small pan over medium heat 2. Cover with the sugar, allow it to melt 3. Add the vanilla extract, stir until it is incorporated 4. Turn the heat to low, and simmer until desired consistency Plating 1. Place one crepe on the plate, fill with a spoonful of the warm Cajeta. Fold into desired shape (rolled, or on a triangular fold) 2. Repeat, serving three crepes per person 3. Add a spoonful of the blueberry compote on the side of the crepes 4. Dust the crepes with icing sugar Serve immediately Traditional Mexican Recipe Cajeta is traditionally made in Central Mexico, particularly in the state of Guanajuato. The originally recipe comes from Spain originally where it was called "burnt milk", made with cow's milk. In Central Mexico the significant production of goat's milk was crucial to the change of the original recipe. Through time different packaging methods were developed to preserve the spread; originally was packaged into wooden boxes called cajas which gives it its current name Cajeta.

What happens when you partner two young entrepreneurs passionate about Mexico and its food?

Rossana Ascencio, a chef dedicated to promoting the flavours of Mexico, and Veronica Rivas, a dynamic PR specialist and all-around communications expert, decide in the Fall of 2013 to launch their line of handcrafted, artisanal products – OMG – Original Mexican Gourmet. It was simply a natural transition for them. The good friends and business partners are also importers of fine vanilla from Mexico with their Vancouver based company Ceiba Gourmet, and looking for recipes to showcase its amazing quality, flavor and aroma, they turned to their culinary roots for inspiration. Their now signature product, CAJETA, began as something they used for their vanilla commercial demos, but thanks to their customers’ amazing feedback, they soon realized they had to begin selling it!

Diving into commercially producing their CAJETA was a simple choice”¦ they both love it! It is a treat they both enjoyed growing up in Mexico, and one they are sure Canadians will fall in love with!

OMG’s Cajeta is made in British Columbia using only the finest ingredients – fresh goat’s milk from Chilliwack, BC, and vanilla from Veracruz, Mexico. They are both adamant about respecting the original recipe, making sure the tradition of handcrafting this delicious product continues.

With OMG – Original Mexican Gourmet – Rossana and Veronica continue to develop new products to showcase the flavours of their homeland. Cajeta”¦is just the beginning!
