Subjected to unparalleled boredom and with few cooking supplies on hand during cattle drives, it was really only a matter of time before cowboys started to eat their coffee. That, or spice their meals with tear-soaked, bitter "Dear John" letters. Luckily they chose the former. Updated with the addition of chipotle, mustard, pepper and chili, and a zing of ginger, this recently revived classic will knock your cowboy boots off! Made with delicious Peaks Coffee roasted in Duncan BC. We've given the Cowboy Coffee Rub an extra blast of coffee flavor by ditching sadly plain white salt in favor of a rich, dark Espresso Brava Salt. Move over Red Bull, there's a new coffee kid on the block!
Suggested Use: ribs, steak, chicken, pork, burgers, roast beef, gravy.
Blueberry & Dark Beer BBQ Sauce using Pixie Chicks Cowboy Coffee Rub
3 pints blueberries
1 cup brown sugar
1 cup balsamic vinegar
1 cup red wine vinegar
3 cloves garlic, minced
1 onion, minced or sliced
1 habanero, halved (seed removed if milder taste desired)
1 dark beer (eg. Phillips Longhouse Chocolate Porter, as in pic)
5 or 6 tbsp Pixie Chicks Cowboy Coffee Rub (to taste, depending on spiciness desired)
1 large can diced tomatoes.
Simmer for 2-3 hours. Blend or puree. Strain. Delicious, dark flavor enhances steaks, ribs, burgers...even meatloaf tastes good!
