Blueberries. That's the first thing you notice when you open this exceptional jar of Blueberry & Bourbon Preserve from Vista D'oro. Then the scent of bourbon hits you. Lee and her team at Vista D'oro are masters at taking a main ingredient (in this case, blueberries) and pairing it with just the right touch of something unusual (here, bourbon) – enough that you taste it but not enough that it overpowers.
All preserves are made using local, in-season fruit (often from the Vista D'oro Farm), slowly cooked down in copper pots. Lee and her team do not add pectin, only sugar and lemon juice and rely on the fruits own naturally occurring pectin for set. This makes for a softer set and allows the fruits’ flavour & texture to maintain its integrity. This also gives the preserves more clarity in both look & taste. Unlike most grocery store jams, ‘jam grade’ fruit is never used at Vista D'oro as it’s usually past it prime and has little to no natural pectin left.
Whether served on a cheese board, smeared on fresh baked scones or hot buttered toast, served as a decadent crepe filling, or as an accompaniment for roast pork - you will lovely the clean, fresh flavours.

We have been producing the line since 2002. The line is seasonal; we do 6 flavours per season. We use traditional old world techniques, small batches, copper pots, in-season fruit. Much of which is either grown at Vista D’oro or at other near-by farms by farmers we trust. We prepare all of the fruit by hand and only use perfectly ripe fruit. We do not add pectin, only sugar and lemon juice and rely on the fruits own naturally occurring pectin for set. This makes for a softer set and allows the fruits’ flavour & texture to maintain its integrity. This also gives the preserves more clarity in both look & taste. This is also why we don’t use ”˜jam grade’ fruit as it’s usually past it prime and has little to no natural pectin left. We also use less sugar than most commercially produced preserves.
The preserves themselves are meant to be used in a variety of ways – with the additions of wine and alcohol as well as the spices, they are excellent on a cheese board with a variety of cheeses or an antipasto platter alongside charcuterie. They are also perfect for finishing sauces, making vinaigrettes & glazing meats. Great over ice cream – or cheesecake, they really are truly versatile. They are just as great on a simple piece of toast or simply straight off a spoon!
