We produce olive oil for our children to eat. Our vision is to create a healing food of the highest biological value. To reconnect with the an ancient land and its people. To build a sustainable farming model that supports the earth and heals those living on it.

Ice Pressed (TM) olive oil has been pressed in the complete absence of heat - a dramatic 30-40 times colder than the typical cold-pressed olive oil, a critical distinction in terms of maintaining the oil's nutritive and healing potential and to staking claim as one of the world’s only RAW producers of olive oil. In the southernmost part of Greece, the art of making superior olive oil has been passed down from generation to generation. For over a century, our family has cultivated the land by hand. Much like our artisan forefathers, we have continued this proud tradition and introducing our integrative medical and manufacturing knowledge have not only elevated our craft but our product.

Ours is the story of 3 generations, and 2 continents. My grandfather was the visionary and architect in the power of the olive tree and more importantly our land. After great success in Canada, my father, Nikolas Rallis, returned to his first love, the land of southern Greece. He left Greece in 1967 with only a suitcase, $3 in his pocket, and dreams of one day returning to this beautiful country. He believes there are no shortcuts in life. Quality and excellence take hard work and time! He has taken artisan farming to a new level. My brother, Dr. Steve Rallis, is the catalyst to creating our RAW olive oil. Committed to passionately “saving lives...ahead of time!” He believes that primary prevention of disease through the expanded use of integrative and lifestyle medicine represents the best hope for global health care reform. And the family calls me 'the renegade'. Innovator, Entrepreneur, Engineer, Farmer and Author. Leveraging my knowledge from over a decade in the technology sector assisting Fortune 500 companies, Theo (me) created and defined Ice Pressing. Applying innovative new practices to traditional processes we continue to bring RAW products to market that help people heal and grow.

Climate, geography and altitude are instrumental to grow quality olives. Our village, Soulinari, is only a few miles from the founding epicenter of the Koroneiki olive variety; far enough inland not to be affected by the Mediterranean salt air, it rests at an altitude 300m above sea level, producing incomparable Koroneiki olives. Quality cannot be mass produced! The wilder and untouched the topography, the harder it is to farm, but greater the reward. Olive trees require a heavy aggregate loam for optimum organoleptic flavour and medicinal value. The Southern Peloponnese is famous for its Koroneiki olive trees. Gnarly, ancient and temperamental to cultivate, they produce an organoleptic balanced taste that is distinctly fruity with grassy notes and hints of wild herbs.

As the farming population continues to age and the costs of production exponentially continue to increase, aggressive short cuts are used with radical pesticides and chemicals to control Grubb and grass. Although not as cost effective, we continue to cultivate and control grass through mechanical, organic and non-chemical means. Several significant factors impact the antioxidant value of olive oil: late harvest, mechanical agitation, slow to press, high heat and filtering. Choosing to bypass these common trappings ensures our olive oil maintains the highest antioxidant and energetic value and its status as a “Raw Super Food”! In olive oil, acidity refers to the formation of free fatty acids or put another way, the breakdown to the quality of an oil. Factors that cause the olive oil to breakdown include, the health of the olives, how aggressive you harvest, time between pressing and heat! Sustainably farming, ice pressing the same day of hand harvesting, we have produced an oil with a near flawless acidity. What does Green really mean? It means making choices that protects the earth, not your shareholder values. Continuing to harvest by hand using battery powered harvesters, processing our olives in the absence of heat and relying on nature to recycle water and nutrients to the soil is painstakingly slow, but a farming process we are committed to!
